Salsa is usually something people use for their taco, especially here in Norway. But salsa can be used for so many dishes – tapas, barbeques, salads, even pizza! You can also use whatever fruits and vegetables you have at hand, and whatever spices you like. No matter what you use, it turns out so much better than store bought salsa.
Here is a refreshing pineapple salsa inspired by our dear friend Vegankongen, who was the vegan chef at our (of course all vegan) wedding in June 2018. Everyone loved it and now we are making it all the time at home.
PS: here we have used canned pineapple because it’s easier and cheaper, but of course it’s much better if you use fresh fruit. Still, it’s really delicious! Try swapping with mango for a change. 🙂
- 1 whole fresh pineapple, or 2-3 cans of pineapple
- 1/2 to 1 red fresh chilipepper, cut in small pieces
- 1 handful of coriander
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1 tsp maple syrup, sugar or other sweetener of choice
- salt, pepper
This is how you do it:
Cut the pineapple in chunks and put them in a bowl. Stir in the rest of the ingredients and let it sit in the fridge for about 30 minutes (or longer if you have the time). This can be served with tacos, pizza, on sandwiches, or straight out of the bowl with a spoon!
