Vegan “chicken” soup

Vegan chicken soup or it is maybe more correct to call it vegan mock chicken soup? I got the recipe from a wonderful colleague, and adjusted it a little bit to fit my liking. The dining table was moaning when I served it, that is how good it was. The kids gulped it, despite the fact that I thought they were going to protest on the peaches. Ingredients for approx. 5-6 people:

  • 2 packs of Oumph (eg garlic and thyme) or 2 packets of vegan half chicken (asian shop, I used it on the picture, it’s incredibly good and not least awesome)
  • 1 large apple
  • 1 large onion
  • 1 box of chopped tomatoes
  • 1 small box of canned peaches (do not miss out on this, it’s super good, I promise!)
  • 2 tablespoons of carbon powder
  • 2 tablespoons of pepper powder
  • 1 tablespoon onion powder
  • 1 teaspoon cumin
  • 1 cup vegetable cream (I used Oatly Oatmeal)
  • 1 cube vegetable broth
  • 1 cup water
  • 1/2 glass of your favorite tacosauce (I used medium strength)
  • 1 teaspoon of sugar or a healthier sweetener option, eg. wage or daddle syrup


Approach:

Chop the onion and fry it with the “chicken”. Put in the spice and let it fry a little. Divide the apple and peaches into cubes and put it in the pan with the rest of the ingredients and let it simmer for 20 minutes (or more) medium heat. Give it a good stir in the saucepan occasionally. Serve with freshly baked baguettes and preferably your favorite vegan sour cream.
