These are perfect for birthday parties, kids love them, and adults too! Let the kids help you make them, the will just love to mix in the colors and add the layers into the paper liners. This can also be made into a large cake, check out the recipe for “Rainbow cake” here on the blog

Ingredients for about 15-16 cupcakes:

  • 400 ml soymilk
  • 2 tsp apple cider vinegar
  • 250 ml sugar
  • 200 ml sunflower oil
  • 500 ml wheat flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • Pinch of salt
  • 2 tsp vanilla extract or vanilla sugar
  • 5-6 different food colorings, I use Wiltons gel colors.

This is how you do it:
Set the oven to 175 c (350 f). Mix together soymilk and vinegar and let ut curdle for about 5 minutes.  Add sugar and oil and mix it well together. Add the rest of the ingredients exept the food coloring, and stir it into a smooth batter.

Place the batter into as many different bowls as you have different colors


Add some different food color into each bowl


Stir the color into the batter


Place the batter into the paper liners.


Try not to use too dark colors.


Place them into the oven for about 15-20 minutes.


Ready to be eaten
