Peanut caramel balls

As most of you probably have seen, we in Vegan Ground are very found of the peanut- and chocolate combo. Also known as Snickers! So we often make desserts, candies and cakes with peanuts and chocolate.

But, since we want to avoid too much refined sugar and unhealthy foods, we want to keep it more or less healthy. At least most of the time.

So one day, when we were craving Snickers, we made these delicious balls! They are made from just dates, peanut butter, vanilla extract and melted dark chocolate (feel free to use whatever type of chocolate you want). These are easy to  make, taste great and keep well  in the fridge or freezer, so you can always have something tasty and relatively healthy to offer your friends and family when they come to visit.

This is not an “exact” recipe, since I just but this and that into the food processor, and since the juicyness of dates vary a lot. So you will have to adjust the consistency after how juicy the dates are and such. But don’t panic, this is a walk in the park!


Ingredients for about 20 balls, depending on their size:

  • 1 jar (about 300 ml) of natural peanut butter, we prefer chunky
  • Dates, the amount vary after juicyness, but maybe 15-20 juicy dates
  • Vanilla extract, about 2 tsp (more if you want)
  • 3-400 grams vegan dark chocolate, for coating
  • chopped salty peanuts


This is how you do it:

Bring peanut butter, vanilla and 10-15 dates in a food processor and pulse until you have a batter that sticks a little but still can be rolled into small balls with your hands without sticking too much. Put in more dates if needed. If it gets too sticky, eiter put in some peanuts and pulse, or throw the batter into the freezer for 15-20 minutes so its easier to make balls.

We like to add chopped or whole salty peanuts into the batter at the end, but this is up to you. Whole or large chopped nuts are delicious in these balls (see pictures).

Wet your hands (or use plastic gloves) and make balls the size you want. These are very filling, so don’t make them too large. Place them on a tray with parchment paper and put them in the freezer for one hour (or longer). When they are deep frozen, the chocolate layer will be much thicker and set much faster, so this is important.

Before you take the frozen balls out, melt the chocolate. Dip the balls into the chocolate with two forks or spoons. Place them back on the tray and sprinkle chopped peanuts over them (hurry up, the chocolate sets fast!)

If the uncoated balls gets too soft, put them bacon in the freezer for 15 minutes before going back to the dipping process.

When all the balls have been chocolate coated and decorated with crushed peanuts, put them in a box and keep them in the fridge until serving. Enjoy!
