This is one of the fastest dishes you can make. Use whole wheat pasta and make it even more healthy. We love this dish, especially on busy work days! 10 minutes and dinner’s ready!
Ingredients for about 2-3 people:
- 5-6 bunts of vegan tagliatelle
- about 20 cherry tomatoes
- 3 cloves of garlic, mashed or chopped
- 1 onion, chopped
- about 200 grams tomato sauce, we use tinned
- lots of fresh or dried parsley!
- Vegan parmesan, if you have
This is how you do it:
Boil the pasta according to the bag. Put oil into a skillet and fry thw onions and garlic for 2 minutes. Add the tomatoes and fry them until they are very soft, about 5 minutes. Add the tomato sauce and parsley and stir well.
Drain the pasta and add to the tomato mixture. Mix it all well and sprinkle with vegan parmesan if you want, and serve with fresh bread and salat, oh, and olives! We love olives with all kinds of pasta dishes!
